Meet Ildefonso Jimenez

Master of Spanish Cuisine and Culinary Innovator

Ildefonso Jimenez, known as the Tapas King, is a celebrated entrepreneur and restaurateur with a passion for introducing authentic Spanish cuisine to his restaurant patrons. Raised in Madrid, Spain, Jimenez was surrounded by food and learned the art of cooking from his parents. He appreciates the simple yet powerful flavors of Spanish cuisine, which combine straightforward ingredients to create remarkable dishes. This background has shaped his approach to cooking and restaurant management, emphasizing authenticity and quality.

Jimenez’s journey in the culinary world began with the launch of Cafe Madrid in 1990, the first Spanish tapas restaurant in Texas. His innovative approach continued with Ketama in Deep Ellum and Hola Tapas Bar in Dallas, each adding unique elements to the local dining scene. In 2007, he introduced BRUT, Dallas’s first Champagne bar, further diversifying the city’s culinary offerings.

In 2009, Jimenez founded Si Tapas, a restaurant and bar in Uptown Dallas on Allen Street. Now in its 16th year, Si Tapas remains a beloved destination for those seeking an exceptional dining experience, blending innovation with tradition. In 2024, he expanded the Si Tapas concept to Artisan Circle in Fort Worth’s world-renowned Cultural District, bringing his signature blend of Spanish cuisine and vibrant atmosphere to a new audience.
